Before I share this clean stuffed chicken breast recipe for cancer families, one of our most nourishing and deeply personal healing meals, I need to tell you about my dad.
My father was not a nutritionist. He was not a functional health practitioner. He did not know anything about grass-fed beef or bioavailable amino acids or the importance of quality sourcing. What he did know was how to make a simple, delicious chicken dinner that made his little girl feel like everything was right in the world.
This recipe is his. I have made it my own over the years with cleaner ingredients and a few upgrades, but every single time I make it I think of him. I hope it becomes a staple in your home the way it has in mine.
Now let me give you the education behind why this meal is doing so much more than just tasting incredible.
Did you know your body uses and assembles approximately 50,000 different proteins to carry out virtually every function that keeps you alive? Fifty thousand. That number still amazes me.
Here is what protein actually does inside your child’s body every single day:
It forms organs, nerves, muscles, and tissue. For a child whose body is actively repairing damage from chemotherapy and radiation, protein is the literal raw material of recovery.
It acts as enzymes, the managers and catalysts behind every biochemical process including digestion, detoxification, and cellular repair. All of which are under enormous pressure during cancer treatment.
It forms antibodies that fight infection and destroy foreign invaders. A child in chemotherapy has a suppressed immune system. Every gram of quality protein is directly supporting their ability to fight back.
It delivers oxygen through the body in the form of hemoglobin. Low protein contributes to the anemia, fatigue, and poor tissue oxygenation that are already common challenges during treatment.
It regulates metabolism and nearly every key hormonal function in the body. For a child whose endocrine system is under stress from treatment drugs, this is not a small thing.
So yes. Protein is essential. But here is where most families miss a critical piece of the puzzle.
I say this with love and a little bit of nutritional tough love: the source of your protein matters just as much as the amount.
Conventionally raised animals are fed GMO grain diets, given routine antibiotics, and raised in conditions that compromise the nutritional quality of their meat and add toxic burden to anyone who eats it. For a child whose body is already processing chemotherapy drugs, pesticide residues and antibiotic byproducts in low-quality meat are the last thing you want to add to the mix.
Quality sourced protein does the opposite. It nourishes. It repairs. It gives a healing body exactly what it needs.
Here are the protein sources I recommend and trust:
Organic, 100% grass-fed, pasture-raised ruminant animals including beef, lamb, bison, buffalo, elk, and goat. Organic, 100% pasture-raised poultry and eggs including chicken, turkey, and duck. Pasture-raised eggs in particular are one of the most nutrient-dense whole foods available. Please do not throw away the yolk. The yolk is where the nutrition lives.
Wild-caught fish and seafood, prioritizing smaller fish lower on the food chain. Sardines, wild salmon, mackerel, and anchovies are rich in anti-inflammatory omega-3 fatty acids and low in heavy metal contamination. Larger fish like tuna and swordfish bioaccumulate mercury and other toxins that add burden to a body already working overtime.
Organic, raw, full-fat dairy from grass-fed or pasture-raised animals. Raw milk cheese is an accessible and delicious option for most families and delivers fat-soluble vitamins and beneficial enzymes that pasteurization destroys.
Soaked and sprouted nuts, seeds, and legumes. The soaking step is non-negotiable. Raw, unsoaked nuts and seeds contain phytic acid that blocks mineral absorption and stresses the digestive system. Soaking neutralizes that and makes the protein and minerals inside actually available to your child’s body.
Before I get to the recipe my dad taught me, I want to let you in on a little trick I use when making the green beans that go alongside this chicken.
I cook them in bone broth instead of water.
That’s it. Same green beans. Same simple preparation. But instead of pouring out nutritionally empty water at the end, you are cooking your vegetables in a liquid that is rich in collagen, gelatin, glycine, proline, and gut-healing compounds that support the intestinal lining, reduce inflammation, and nourish joints and connective tissue.
Nobody at your table will know. Your kids will not taste the difference. But their gut lining absolutely will.
This is one of my favorite ways to sneak bone broth into a meal without anyone putting up a fight. You can do this with any vegetable you are sauteing or simmering. Just swap the water for broth and carry on. You are welcome.

My father made this chicken recipe for me growing up and it was one of my absolute favorite meals. There was nothing fancy about it. It was simple, satisfying, and made with the kind of love that only a dad cooking for his little girl can produce.
I have upgraded it over the years with cleaner ingredients and better sourcing. But the bones of the recipe are his, and I think of him every single time I make it. Food has a beautiful way of keeping people close even when distance or time separates you.
