Graham crackers hold a very special place in my heart.
Specifically graham crackers with cream cheese spread generously across them. If you know, you know. There is something about that combination that feels like childhood and comfort and every good thing simultaneously.
The problem is most store-bought graham crackers are built on high fructose corn syrup, hydrogenated oils, enriched flour and a supporting cast of artificial flavors and preservatives. None of this has any business being inside a healing child’s body.
For a family navigating childhood cancer, these are not minor concerns. High fructose corn syrup feeds cancer cells directly through the Warburg Effect and suppresses immune function for up to 24 hours after consumption. Hydrogenated oils create trans fats that damage cell membranes and drive systemic inflammation. Enriched flour converts rapidly to glucose in the bloodstream and delivers the exact metabolic environment that cancer cells thrive in.
So after a year of recipe testing, I finally landed on a version that is genuinely perfect. Grain-free, dairy-free, refined sugar-free, and so delicious that the night we first made s’mores with them at a bonfire my children looked at me with the kind of wonder usually reserved for birthdays and Christmas morning.
For approximately thirty seconds I was the favorite parent in the house. I will take it.
Every ingredient in these graham crackers does something genuinely good for a child in cancer treatment or recovery.
Almond flour replaces refined wheat flour entirely and delivers protein, healthy fat, vitamin E, and magnesium alongside a rich, slightly nutty flavor that makes these crackers taste even better than the original. It does not spike blood sugar the way refined flour does and it does not carry the glyphosate contamination found in conventionally grown wheat. For maximum digestibility and nutrient absorption, use finely blanched almond flour rather than almond meal.
Organic coconut flour adds fiber and structure alongside a mild sweetness that complements the cinnamon beautifully. Coconut flour is rich in medium-chain triglycerides and lauric acid with antimicrobial properties that are especially supportive for children dealing with gut dysbiosis during treatment.
Raw honey from Lineage provides all of the sweetness these crackers need alongside enzymes, antioxidants, and antimicrobial compounds that actually support immune function. Unlike refined sugar, raw honey does not create the same blood sugar spike and does not directly feed cancer cells the way glucose from refined sweeteners does.
Grass-fed butter or organic coconut oil provides the fat that gives these crackers their incredible texture and flavor. Both are excellent high-heat cooking fats that are stable and non-inflammatory. Grass-fed butter delivers fat-soluble vitamins A, D, E, and K2 alongside conjugated linoleic acid that has documented anti-cancer properties. Coconut oil delivers medium-chain triglycerides for brain energy and lauric acid with antimicrobial and antifungal properties.
Organic cinnamon is doing far more than flavoring here. Cinnamon supports healthy blood sugar regulation, delivers a powerful concentration of antioxidants that neutralize cancer-causing free radicals, and has documented anti-inflammatory properties that are directly relevant for a child in cancer treatment. Two tablespoons in a batch of crackers means every serving delivers a meaningful therapeutic dose.
Pasture-raised eggs add complete protein, choline for brain health, and fat-soluble vitamins in a form the body recognizes and can immediately absorb. Always choose pasture-raised from a quality source for the highest nutritional content.
Aluminum-free baking powder matters more than most people realize. Conventional baking powder contains aluminum, a known neurotoxin that accumulates in the body and adds burden to already overtaxed detox pathways. Always choose an aluminum-free version without exception.
Celtic Sea Salt or Redmond’s Real Salt delivers trace minerals including magnesium, potassium, and calcium in their natural, bioavailable form rather than the stripped, processed iodized table salt that offers no therapeutic value.

The obvious answer is s’mores, and we absolutely use them for that. Pair them with our homemade gut-healing marshmallow recipe and Enjoy Life or date-sweetened chocolate chips for a completely clean campfire experience that your cancer kid can participate in fully alongside every other child at the bonfire.
However these crackers go well beyond the campfire. Spread them with raw almond butter and a drizzle of raw honey from Lineage for a satisfying snack that delivers protein, healthy fat, and natural sweetness without a single inflammatory ingredient. Use them as a base for our clean S’mores Pie recipe on the blog. Pack them in a glass container topped with organic cream cheese for clinic days alongside soaked nuts and organic fruit for a portable and nourishing snack box. Serve them with raw milk cheese for a savory option that delivers protein, fat-soluble vitamins, and beneficial probiotics alongside the crunch.
This recipe makes a generous batch that stores well at room temperature in a glass container for up to a week. They also freeze beautifully for up to three months.

Step 1: Preheat your oven to 350 degrees F.
Step 2: In a medium bowl combine the almond flour, coconut flour, sea salt, baking powder, and cinnamon. Whisk together until fully combined.
Step 3: In a food processor or stand mixer, combine the coconut oil or butter, raw honey, vanilla extract, and eggs. Blend until smooth and fully incorporated.
Step 4: Add the dry ingredients to the wet ingredients and mix until a cohesive dough forms. The dough will be slightly soft but should hold together well.
Step 5: Divide the dough into two equal balls. Place each ball on a separate parchment-lined baking sheet.
Step 6: Place a sheet of waxed paper or a second piece of parchment over each dough ball and roll out as thinly and evenly as possible. The thinner you roll them the crispier the final cracker. Remove the top paper once rolled.
Step 7: Bake for 12 to 15 minutes until the edges are lightly golden. Watch carefully in the final few minutes as almond flour can brown quickly. The crackers will appear slightly soft when you remove them from the oven.
Step 8: Allow to cool on the baking sheet for 20 to 30 minutes without moving them. They will firm up significantly as they cool. Do not rush this step.
Step 9: Once completely cooled and firm, use a pizza cutter or sharp knife to cut into even squares. Store in a glass container at room temperature for up to one week or in the freezer for up to three months.
A note on consistency: if your dough feels too soft to roll, refrigerate it for 30 minutes before rolling. If it feels too dry, add a teaspoon of coconut oil at a time until it reaches the right consistency. Every kitchen runs a little differently and almond flour brands can vary in moisture content.
Last summer we had our first bonfire of the season and we brought these graham crackers alongside our homemade gut-healing marshmallows and a clean dark chocolate with no refined sugar, no soy, and no artificial ingredients.
My kids roasted their marshmallows. They assembled their s’mores. They bit into them and their eyes went wide in that specific way that children’s eyes go wide when something is genuinely extraordinary.
For a brief and beautiful moment I was the coolest parent alive. My children thought it was their birthday. One of them asked if we could have s’mores every single night for the rest of their lives.
That is what a healing food can do when it is made with enough love and enough intention. It does not feel like deprivation. It feels like celebration. And for a cancer kid who navigates so many dietary restrictions every single day, a moment of pure uncomplicated joy around a bonfire with a s’more in their hand is medicine of a different and equally important kind.

Is this a recipe we should avoid while my husband fights active cancer? I’d love to make it, but may need to wait?
Hi Pam…I recommend avoiding all sugar while actively fighting cancer, so yes.
Would this work with avocado oil instead of coconut oil? We can’t do butter and coconut oil has such a strong flavor.
