I mean…I’m that girl that at the first sign of September leaves falling heads to the store to buy ALL the pumpkins, starts making ALL the pumpkin things and begins planning our holiday meals around the pumpkin, NOT the turkey!

This recipe, however, may just push you over the edge in your pumpkin obsession because now you can START your day with Pumpkin Pancakes.

Pumpkin Pancakes
Instructions
- Whisk eggs, pumpkin, ghee, and vanilla together.
- Add baking soda and spices to wet ingredients.
- Melt coconut oil over skillet and add 1⁄4 cup of batter.
- Once a few bubbles appear flip the pancakes once to finish cooking.
- Serve with ghee.
